There is that time of day, appropriately called "happy hour," when the to-do's are behind us, the easiness of the evening is setting in and a cocktail and a nibble are not only deserved but necessary. Whoever invented happy hour is a genius; everyone loves an excuse to imbibe midweek, and even the ears of the most cynical coworker perk up at the sound of $2 Dos Equis and 1/2 priced potato skins.
As much as my boyfriend and I love a jaunt to the Applebee's up the street, sometimes we want all the perks except only in our PJ's and minus the other people. So, on Friday we had our own little homemade happy hour. He mixed up the drinks (gin and bitter lemon for me, bourbon and coke for himself) and I put out a spread of homemade soft pretzel sticks, bacon-wrapped apricots stuffed with fontina, and spinach dip wontons. We really didn't even need dinner afterwards, which was perfect because after a few ginnies I didn't feel like cooking. The pretzels take a little bit of prep, but the other two snacks come together in just minutes. So while it was a wonderfully relaxing way to usher in the weekend, these make great weeknight treats too!
